M&M’s® Red and Green Crepe Cake

This festive show-stopping M&M’s® cake is prepared with layers of homemade crepes and a simple creamy vanilla frosting.

Recipe Ingredients:
  • 2 eggs, at room temperature
  • 1 cup 2% milk
  • 3/4 cup all-purpose flour
  • 1/4 tsp salt
  • 3 tbsp vegetable oil, divided
  • 3 to 4 drops red food coloring or gel
  • 3 to 4 drops green food coloring or gel
  • 6 oz low-fat brick-style plain cream cheese, softened
  • 1/4 cup confectioners’ (icing) sugar, sifted
  • 1 serving (3.25 oz) prepared vanilla pudding cup
  • 1/2 cup heavy or whipping (35%) cream, whipped to stiff peaks
  • 1/2 cup M&M’S® Red and Green Milk Chocolate
Directions:

Prep Time: 20 minutes

Cook Time: 25 minutes

Total Time: 45 minutes (+ 50 minutes standing time)

  1. Into blender, add eggs, milk, flour, salt and 2 tbsp oil; blend until smooth. Divide batter into 2 medium bowls. Stir red food coloring, as desired, into 1 bowl. Stir green food coloring, as desired, into the other bowl. Let stand for at least 30 minutes or until batter is the consistency of thick cream. If too thick, thin with more water, 1 tsp at a time.
  2. Brush some of the remaining oil in 7-inch nonstick skillet setover medium heat. Pour 3 tbsp red batter into skillet, swirling to thinly coat bottom. Cook for 60 to 90 seconds or until crepe begins to curl around edges. Flip and cook for 30 seconds or until set. Transfer to parchment paper–lined baking sheet. Repeat with remaining red batter to make 6 crepes. Repeat with green batter to make 6 crepes. Let cool completely.
  3. In another medium bowl, using handheld electric mixer, beat together cream cheese and confectioners’ sugar until combined. Beat in vanilla pudding until blended and smooth. Fold in whipped cream.
  4. Place 1 green crepe on serving dish. Spread evenly with thin layer of cream cheese mixture and sprinkle with 1 tbsp M&M’S®. Stack a red crepe over top, spread on another thin layer of cream cheese mixture and sprinkle with 1 tbsp M&M’S®. Repeat stacking crepes, alternating green and red crepes and layering evenly with cream cheese mixture and M&M’S®. Garnish top with remaining M&M’S®.
