Recipe Ingredients:
- 1/2 cup M&M’S® White Chocolate Pretzel Snowballs (or your favorite flavor of M&M'S), divided
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/3 cup butter, softened
- 3 tbsp smooth peanut butter
- 1/4 cup packed brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 1 tbsp low-fat milk
- 1/2 tsp vanilla extract
- 1/3 cup vanilla-flavored white royal icing
- 6 regular-size marshmallows, halved crosswise
- 1 small tube black or brown gel icing
- 12 long orange candy sprinkles
Directions:
Prep Time: 30 minutes
Cook Time: 10 minutes
Total Time: 40 minutes (+ 1 hour 15 minutes standing time)
- Reserve 24 whole M&M’S® for Step 8. Finely chop remaining M&M’S®.
- In medium bowl, whisk together flour, baking powder and salt.
- In large bowl, using handheld electric mixer, beat together butter and peanut butter until blended. Beat in brown sugar and granulated sugar until light and fluffy. Beat in egg until incorporated. Beat in milk and vanilla until combined.
- Beat in flour mixture just until blended. Stir in chopped M&M’S®. Chill dough for at least 30 minutes.
- Preheat oven to 350˚F.
- Divide dough into 12 even portions and roll each into a ball. Transfer to parchment paper–lined baking sheet, spacing at least 3 inches apart. Using fork, flatten each dough ball into a cookie shape.
- Bake for 9 to 12 minutes or until edges are golden and tops are set. Let cool completely on baking sheet.
- Spread royal icing evenly over bottom sides of cookies, creating a smooth surface and allowing it to drip over sides. While icing is still wet, place marshmallow half, cut-side down, on top of each cookie, toward one side to resemble a melting snowman’s head. Add 2 M&M’S® to each cookie for the snowman’s buttons. Let stand for 15 to 20 minutes or until icing is dry to the touch.
- Using black icing, pipe snowman’s eyes, mouth and stick arms. Using more royal icing, attach an orange sprinkle on each snowman’s face for its nose. Let stand for 10 to 15 minutes or until icing is completely set before serving.
Tip: For a quick and easy holiday project with the kids, use store-bought prepared cookie dough.
